Semi-Raw Granola

I make homemade almond milk for my 21-month old daughter on a regular basis.  So what the heck do you do with all this dang almond meal that accumulates?  I've made crackers, muffins, cookies, and now granola.  I have to admit that sometimes I run out of inspiration and just chuck the almond meal on the compost pile, which kills me to do.  I'm curious if anyone else has any ideas of what to do with almond meal?

I'm not totally raw so I baked this granola at 200 degrees F. for 2 hours to dry it out and make it crispy, but you could accomplish the same in a dehydrator for a longer period of time (overnight probably). 


Semi-Raw Granola  gluten free

Makes about 8 cups

4 cups almond meal, leftover from making almond milk
4 cups gluten free rolled oats
1/4 cup brown rice syrup (or maple syrup or agave nectar)
2 teaspoons ground cinnamon
1 cup raisins

Mix everything except the raisins together in a bowl. Transfer to a lightly oiled baking sheet and bake for 2 hours or until crispy. Add the raisins and cool completely before storing in an airtight container. Serve with almond milk and fresh fruit.
